PRODUCT ALERT!
Onions are difficult at the moment. New season Spanish have not got set skins and do not keep as well as the main crop ones.
Southern hemisphere onions (Chile, New Zealand, Tasmania) have set skins but are lot more expensive. As they reach the end of their season they will start sprouting.
The answer - don't buy too far in front - keep stocks tight and the Spanish will be fine.
